
- 120 g unsalted butter
- 200 g caster sugar
- 1 large egg + 1 egg yolk
- 1.5 tsp baking powder
- 1.5 tsp bicarbonate of soda
- 280 g plain flour
- 20 g corn flour
- 150 g Cadbury Mini Eggs (Chopped)
- 100 g Cadbury Dairy Milk
- 1 jar chocolate spread
- 2 Cadbury Flake
- 30 Cadbury Mini Eggs (for decoration)

Preheat your oven on gas mark 5/190°C and grease the doughnut moulds

Add the unsalted butter and caster sugar to a bowl and cream together until fully incorporated. Add in the plain flour, cornflour, baking powder, bicarbonate of soda, salt , Cadbury Mini Eggs and Cadbury Dairy Milk and mix

Add in your eggs and vanilla and mix until a cookie dough has formed! Your dough should be coming together in clumps but still “shaggy” and start coming away from the bowl

Weigh the cookies out into 9 balls, roughly 100g each. Press into a silicone doughnut mould and put them onto a baking tray. Bake the cookienuts for 10–12 mins

Once baked, allow to cool completely before removing from moulds and decorating

Melt your chocolate spread in a bowl and dip your cookienuts upside down into the melted chocolate and swirl off the excess chocolate. Place onto a baking tray and sprinkle over crushed flake chocolate

Chill your decorated cookie nests in the fridge. Once chilled, place 3 Cadbury Mini Eggs in the middle
