
- 102 g unsalted butter
- 200 g caster sugar
- 1 large egg + 1 egg yolk
- 1.5 tsp baking powder
- 0.5 tsp bicarbonate of soda
- 0.5 tsp salt
- 280 g plain flour
- 20 g corn flour
- 150 g Cadbury Mini Eggs (Half Crushed and Half Whole)
- 150 g Cadbury Mini Eggs Bar (chopped)

Add the unsalted butter and caster sugar to a bowl and beat until fully incorporated, you don’t want to cream them until light and fluffy

Add in the plain flour, cornflour, baking powder, bicarbonate of soda, salt and Cadbury Mini Eggs and Cadbury Mini Egg Bar and mix

Add in the eggs and mix until a cookie dough has formed – the dough should be coming together in clumps but still "shaggy" and starting to come away from the bowl

Weigh the cookies out into eight cookie dough balls of about 110g each and then place in the freezer for an hour

Preheat your oven to gas mark 5/190°C, then take the balls out of the freezer and put onto lined baking trays with enough space between them

Bake the cookies in the oven for 12–14 mins

Once baked, push in some more Cadbury Mini Eggs (optional) and leave them to cool on the baking tray for at least 30 mins, as they will continue to bake whilst cooling
