Place 6 meringue nests on a serving plate. Break the remaining 2 nests into small pieces and set aside.
Whip the double cream until it stands in soft peaks and gently fold in the mango and broken meringue pieces. Divide the mixture between the meringue nests.
Cut the Creme Eggs in half horizontally and place one on top of each filled meringue nest. Drizzle 1 tablespoon fruit coulis over each nest to resemble a runny yolk. Decorate with a sprinkling of vanilla bean powder and sprig of fresh mint.

100 ml mango coulis
vanilla bean powder to decorate
