• Place 6 meringue nests on a serving plate. Break the remaining 2 nests into small pieces and set aside.
  • Whip the double cream until it stands in soft peaks and gently fold in the mango and broken meringue pieces. Divide the mixture between the meringue nests.
  • Cut the Creme Eggs in half horizontally and place one on top of each filled meringue nest. Drizzle 1 tablespoon fruit coulis over each nest to resemble a runny yolk. Decorate with a sprinkling of vanilla bean powder and sprig of fresh mint.
