Colour absent
Means contains no added colours including both from artificial and natural sources.
Cross contamination
As well as the recipe, we also take due consideration of the presence in compound ingredients (e.g. cereals and flavours), the possibility of their use during manufacture, in the production of the ingredient or their presence as a result of cross contamination from the use of non-dedicated production lines.
Egg absent
Means products do not contain fresh egg, dried egg, egg white (egg albumen), egg lecithin, egg yolk. It also takes into account of the definition for cross contamination.
Gluten absent and Wheat absent Products.
Both coeliac disease and wheat allergy are specific conditions; Coeliac disease is the main form of wheat intolerance and is estimated to have a prevalence of about one person in 300. Wheat allergy is thought to be very rare, the true incidence is unknown but it is estimated to affect a tiny percentage of the population. (Information sourced from The British Nutrition Foundation).
Gluten absent
These products are suitable for people who suffer from Coeliac disease as they meet the current standard for gluten absent, as set by the international body, Codex Alimentarius. Products which may contain traces of wheat are also excluded from the gluten absent list.

Wheat absent
These products not only conform to the gluten absent criteria but additionally exclude products whose ingredients are derived from wheat, for example glucose syrup. It also takes into account of the definition for cross contamination.

Milk absent
Means absent from butter, milk proteins also known as casienates, cheese, cream, margarine or shortening containing whey, milk/milk powders, whey, whey syrup sweetener, yoghurt. It also takes account of the definition for cross contamination.
Nuts absent
Means we have considered every potential for nut to enter the production process including the definition for cross contamination.
Nuts includes almond, hazelnut, walnut, cashew nut, pecan nut, brazil nut, pistachio nut, macadamia nut, queensland nut. We have also excluded those few products that contain peanuts only.
We do not regard coconut as a nut.
In our definition of products that are "nut absent" we have also taken account of the presence of nut oils in our ingredients and would exclude from the above definition any product containing any unrefined oils extracted from nuts.
Peanut absent
Peanuts are not regarded as true nuts and so we have separated them from nuts and detailed them as a separate allergen.We do not use peanut oil generally but where it could be used we have taken account of the advice from the Anaphylaxis Campaign. It also takes account of potential cross contamination.
Salt absent
Means absent from salt added to the recipe. We have not given a salt equivalent value but this can be derived by multiplying the sodium value by 2.5.
Sesame seed absent
Means absent from all forms of sesame including tahini, homous, halva and sesame oil. It also takes account of potential cross contamination.
Soya absent
Means absent from all soya derivatives including soya flavouring, hydrolysed vegetable protein, soya lecithin, soya protein products.
It also takes account of potential cross contamination.
Sulphite absent
We have analysed our product range and have considered sulphite absent to be less than 10 mg/kg of total sulphites .
Vegetarian
Absent from all animal based ingredients except for milk and eggs. All additives are vegetable based where there is an animal derived alternative. The whey is derived from a process, which uses non-animal rennet.
We have been advised that Shellac is regarded as being suitable for a vegetarian.
Where appropriate our products carry a vegetarian symbol.
Vegan
Absent from all animal based products including cochineal, shellac and bees wax.
